An enzyme used in cheese flavoring that can be animal, microbial, or plant sourced.

Why?

Lipase is an enzyme used to develop flavor in some cheeses and dairy products. It can be extracted from animal sources (typically calf, kid, or lamb stomachs), or produced from microbial or fungal fermentation. Microbial lipase is halal regardless of source; animal lipase follows the same halal-slaughter rule as rennet, and is treated as doubtful when unspecified.
