Beer (as ingredient)

Beer and wine used directly as cooking ingredients remain intoxicants and are haram, even after partial cooking.
Why?
Unlike vinegar, which undergoes full fermentation into acetic acid, dishes prepared with beer, wine, or spirits as a direct ingredient (batters, sauces, reductions, marinades) retain alcohol content even after cooking reduces it, and the intoxicating substance itself is used deliberately. The majority scholarly view treats this as haram, distinguishing it from the istihalah (transformation) that makes wine vinegar permissible.

Common in restaurant dishes like beer-battered fish, coq au vin, or wine reduction sauces — not always disclosed on menus.
